Some of the recipes on the Kimkins website seem like they might be pretty good. Leek & Mushroom Soup with Spinach sounds quite nutritious.

I am more familiar with leek and potato soup, which would be verboten for those following a strict low carb diet. If you find a soup recipe that works for your diet, be sure to keep track of your sodium intake as some recipes are on the high side. I think spinach it a great food to experiment with.
